Rules at a Glance 

Competition is for "Traditional Red Chili," any kind of meat or combination of meat cooked with red chili peppers, various spices and other ingredients.

  1. No ingredient can be pre-cooked.
  2. The registration table will open at 7:00 a.m.
  3. Cooking begins at 9:00 a.m.
  4. Each team must cook a minimum of 1 quart of chili for judging.
  5. Open category entry Fee is $25.00 per team.
  6. CASI category entry Fee is $15.00 per team.
